For the pudding
  • 1 cup fresh mixed berries (strawberries, raspberries, blackberries, and blueberries, divided) Use your favorite mixed berries
  • 1 cup whole milk Can substitute with almond or coconut milk for dairy-free option
  • 1 tablespoon maple syrup Adjust sweetness to your liking
  • ½ teaspoon vanilla extract
  • 3 tablespoons chia seeds Let them soak for best texture
  • ½ cup Greek yogurt Try a dairy-free yogurt to make it vegan
  • 2 tablespoons sliced almonds For topping

Method

Preparation
  1. In a blender, add ½ cup of mixed berries, milk, maple syrup, and vanilla. Blend for about 1 minute until smooth.
  2. Pour the blended mixture into a medium bowl. Sprinkle the chia seeds over it and mix well. Let it sit for 10 minutes, then stir again to ensure no lumps.
  3. Cover the bowl and refrigerate the chia pudding for at least 1 hour, or overnight for the best texture.
Assembly
  1. When ready to serve, layer the pudding and Greek yogurt in a glass. Start with 2 tablespoons of the berry chia pudding, followed by 2 tablespoons of Greek yogurt, and repeat to create beautiful layers.
  2. Top with fresh berries and sliced almonds. Drizzle a bit more maple syrup on top if desired and enjoy!

Notes

Store in an airtight container in the fridge for up to 5 days. Stir well before serving. Freezing isn’t recommended as it may change the texture.
