Ingredients

Main Ingredients
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3-4 medium bananas (or 2 large bananas) Make sure bananas are overripe for best flavor.
  • 1 tsp vanilla extract

Method

Preparation
  1. Preheat the oven to 350 degrees and line two 8x4 bread pans with parchment paper or grease well with butter or baking spray.
  2. In a medium-sized bowl, use a fork to mash the bananas until well mashed (a few small bits for texture is fine).
  3. In a separate bowl, cream together the butter and sugar using a hand mixer or standing mixer.
  4. Add in the eggs and cream the mixture until well blended.
  5. Add the flour, baking soda, and salt to the mixture. Mix until just combined.
  6. Add the mashed bananas and vanilla extract. Mix until everything is incorporated.
Baking
  1. Divide the batter evenly between the two bread pans.
  2. Bake for approximately 35-40 minutes, or until the top is puffed, brown, and a cake tester comes out clean.
Cooling
  1. Allow the bread to cool for 5-10 minutes in the pan, then remove from the loaf pans and let cool on a wire rack.
Serving
  1. Serve warm, at room temperature, or cold. Optionally spread a little butter on top.

Notes

Store your banana bread tightly wrapped at room temperature for 2-3 days or in the refrigerator for up to a week. For longer storage, freeze it by slicing and wrapping each slice in plastic wrap.
