Ingredients

Pork Chop Preparation
  • 4 pieces pork chops (bone-in, about 1-inch thick)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt to taste Salt, to taste
  • Black pepper to taste Black pepper, to taste
Onion Mixture
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon fresh thyme leaves
  • 1 cup shredded Gruyère cheese (or mozzarella)
  • Fresh parsley or thyme for garnish Fresh parsley or thyme, for garnish (optional)

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season both sides of the pork chops with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Sear the pork chops for about 3–4 minutes per side until golden brown. Remove them and set aside.
Onion Cooking
  1. Reduce the heat to medium and add butter to the same skillet.
  2. Add the sliced onions and cook slowly, stirring occasionally, until caramelized (about 20–25 minutes).
  3. Stir in the minced garlic and cook for 1 more minute.
  4. Pour in the beef broth, scraping up the brown bits from the bottom of the pan.
  5. Add thyme and simmer for 3–5 minutes to reduce slightly.
  6. Return the pork chops to the skillet, nestling them into the onions.
  7. Top each chop with shredded cheese.
  8. Transfer the skillet to the oven and bake for 10–12 minutes, or until the cheese is melted and bubbly, and the pork is cooked through (internal temperature of 145°F).
Serving
  1. Garnish with fresh parsley or thyme and serve hot with extra onion gravy spooned over each chop.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) until heated through. To enhance flavor, caramelize the onions slowly and give the pork chops time to rest after cooking.
