Ingredients

For the Chicken
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
For the Pasta
  • 300 g pasta (penne, fettuccine, or your choice)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (plus extra for garnish)

Method

Preparation
  1. In a large skillet over medium heat, add the olive oil.
  2. Add the chicken and cook for 5-7 minutes, until golden brown and cooked through.
  3. Mix in the butter and minced garlic with the chicken for another 1-2 minutes, then remove from the skillet and set aside.
  4. Pour in the heavy cream to the skillet, stirring well. Bring to a gentle simmer and stir in the Parmesan cheese and Italian seasoning.
  5. Cook for 2-3 minutes until the sauce thickens slightly.
  6. Cook your pasta according to package instructions.
  7. Toss the cooked pasta with the sauce and return the chicken to the skillet to combine.
  8. Serve topped with parsley.

Notes

Timing is Everything: Sauté garlic until fragrant but not burnt for best flavor. Al dente pasta holds up better in sauce. Freshly grated Parmesan melts better than pre-grated. You can add veggies like spinach or broccoli for color and nutrients.
