Ingredients

Cheesecake Filling
  • 85 g cream cheese
  • 15 g sugar
  • 1/2 tsp vanilla extract
  • 50 g fresh strawberries, diced
Cookie Dough
  • 15 g sugar
  • 1 tsp lemon juice
  • 115 g butter, softened
  • 90 g sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 130 g all-purpose flour
  • 1/4 tsp baking powder
Strawberry Compote
  • 50 g fresh strawberries, diced Use the strawberries from the filling if desired.
  • 15 g sugar
  • 1 tsp lemon juice

Method

Prepare Cheesecake Filling
  1. In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
  2. Scoop small portions onto a tray and freeze until firm (about 1–2 hours).
Make Strawberry Compote
  1. In a pot, combine strawberries, sugar, and lemon juice. Cook over medium heat until thickened and jammy. Let it cool.
Prepare Cookie Dough
  1. Preheat your oven to 175°C (350°F).
  2. In a clean bowl, mix butter and sugar until fluffy, then add egg yolk and vanilla.
  3. Stir in flour and baking powder, then fold in the cooled strawberry compote.
Assemble and Bake
  1. Scoop cookie dough, flatten it, and place a frozen cheesecake filling inside.
  2. Wrap the dough around it, seal, and place on a tray.
  3. Bake for 11–12 minutes until the edges are set.
  4. Let cookies cool slightly — the cheesecake center will firm up as they rest.
Serve
  1. Bite in and enjoy the strawberry + cheesecake combo!

Notes

Chill the filling to prevent it from melting too much during baking. Allow cookies to cool slightly before digging in for the best flavor. You can experiment with sweetness by adding more sugar if desired.
